Ramen noodle soup is usually made with either soy sauce, miso, or salt-based sauces with broth from pork, chicken, seafood, vegetables, etc. The combination of the soup varies depending on each noodle brand.

Soba
There are 24,924 soba shops in Japan.*
Soba is the Japanese name for buckwheat. It usually refers to relatively thin noodles made from buckwheat flour, or a combination of buckwheat and wheat flours.
In Japan, soba noodles can be found in a variety of settings, from "fast food" places to expensive specialty restaurants.
There are a wide variety of soba dishes, both hot, for winter, and cold, for summer.
Soba is usually eaten with dipping sauce which is called tsuyu. The tsuyu is made of a strong mixture of dashi stocks and soy sauce. Dashi is a broth made from either fish, shrimp, or kelp.

Udon

Udon is a white and thick Japanese noodles made from wheat flour.
They have a chewy texture and are most commonly used in traditional hot Japanese noodle soup recipes, where the udon is served in a savory dashi soup broth with several garnishes on top.
The flavor of the broth and toppings vary from region to region. Usually, dark brown broth, made from dark soy sauce is used in eastern Japan. Light brown broth, made from light soy sauce, is used in western Japan. Currynanban is another popular variation, served in curry broth.
